Beet red is easily soluble in water and milk. The aqueous solution is red to reddish purple, pH3.0 ~ 7.0 is relatively stable, pH4.0 ~ 5.0 is the most stable. The staining property is good, but the heat resistance is poor, and the degradation rate increases with the increase of temperature. Light and oxygen also promote degradation. Ascorbic acid has a certain protective effect, and the stability increases with the decrease of food moisture activity (Aw).
