Chilli extract, also known as Capsicum oleoresin , is a product extracted and concentrated from chilli peppers, which has a strong pungent flavour and is used to make food seasonings. In addition to containing the pungent components of chilli peppers, Capsaicin also contains more than a hundred complex chemical substances such as capsaicin alcohol, proteins, pectin, polysaccharides, capsaicin, and other red pigments. Capsaicin is not an illegal additive but an extract of a natural food ingredient. Capsicum oleoresin as a flavour enhancer and colouring agent has been included in the National Standard for Food Safety Standard for the Use of Food Additives (GB 2760), and is allowed to be used in food categories such as dried beans, spice oils, compound seasonings, etc. This application expands the scope of use to other (konjac gel products only) (food category 16.07). It is permitted to be used as a flavour enhancer and colouring agent in general food products by the US Food and Drug Administration, the Food Standards Agency of Australia and New Zealand, and others. Based on the results of the Joint FAO/WHO Expert Committee on Food Additives (JECFA) evaluation, the ADI for this substance does not need to be limited.
